Slightly green bananas
2 TBS butter
Crushed salteen crackers
Mayonaise or whipped cream for garnish
Melt butter in non-stick frying pan on medium heat. Peal bananas, slice lengthwise in half and cut into two pieces. Whip egg in a bowl and dip banana piece and roll in crushed salteens. Put into skillet and fry until golden brown on both sides. Put on plate and add a dolop of regular mayonaise or whipped cream.
This is something my mother fixed for us while we were growing up and I still fix today. Great for breakfast or a side dish. Personally, I prefer them with mayonaise.
